I was just wondering will you see people walking around in towns? Will u see people fishing,mining,farming etc?

Yes you can see people running around.

Seeing a worker in CloseView should be a rare sight...
I can't imagin a french woodcutter saying:
"Pah! A german army won't keep me from doing my labor. I'm off to work, darling!"
But yes, here (http://www.knights-of-honor.net//gfx/screenshots/scr_koh_0105.jpg) is a very old screenshot, where you can still see the farmers working during a battle.

i read somthing the the villagers will run when your units get close to them... Is that true?

yes, they will run away when the battle starts...at least this was told us by the devs...:)

And I think Kuno is right, too. It would be really surprising if the peasants are just beamed away at the beginning of the battle...
