Since Moats are not represented visually in Battle View (tactical battles), how are their effects implemented?

A moat gives your units a defensive bonus in town assaults. Read the tooltip of the moat when floating the mouse over the icon in the construction menu.

They may say that when you make them but if you are in a battle does it show up and say
"10% defense bonus"

Yes, all units of the defender recieve the bonus.
Your bonus is indicated in the upper left corner of the screen. There is a big square that will show a shield (for defensive bonus) with the total percentage near it. When you have multiple buildings that give you a defensive bonus they are summed up. The enemy's bonus is shown in the upper right corner.
A red glowing sword in that square indicates an offensive bonus. When there are both offensive and defensive boni they are shown as a splitscreen in the square.
Also, be sure to click the small arrow just below the bonus-indicator. It will expand the marshall-skills and show which skills the marshalls have (even for the enemy).
