I never do. It is a waste of a good marshall. The only benafit is if the marshall has no skill and could be a spy, call him on a crusade and you may get a vassal.

Pro:
You get to pounce a nation with strong Crusader units.
You might get more land or a vassal or something else.
Catholic nations don't hate you more.
Con:
You lose temporarily the marshals current units, and they lose their experience.
By the time your marshal gets to where he needs to be, he might have no food so little morale plus enemy land morale penalty.
You lose a marshal temporarily.
