How realistic will the battles be? Will your men run away in bad situations? Do they ever get tired? Will they fight best with high morale and completely rested? I think these are all very important parts of realism and should be included.

Yes, and even they can surrender. And even you can actually see prisoners on battle field.

battle simulations are usually the worst programmed....

Yes, but this may affect your relation with other Kingdoms, your Knights etc.

What have you not included into this game?

Question how long will a typical battle last? I know that time is only revealed in the sense of a day/night cycle...with battles last an entire day?

The battle length depends on the army size of the defender and attacker, reinforcements joining etc. I had some battles which lasted 30 minutes or so. Other were very quick. But my (personal) guess is it will be 10 - 20 minutes in average. Maybe Frujin has a better idea?
