if you attack any contry or citty can you attack it by 2 knights or more of just only one

You can attack with one but another one can reinforce you...

We can appoint maximum 9 persons - does that mean we can only create 9 armies led by 9 knights - or is there no limited relation between those persons and the armies of your nation?

Yes the limit is your slots. An army can usually have only 9 slots. Each slot is for a squad or one siege equipment. With a specific marshal skill an army can have up to 12 slots.
